Direct Preparation: From Brown Butter to Poaching

Skate is technically versatile, performing equally well in high-heat and low-heat environments. For a classic Meunière-style preparation, lightly dredge the fillets in flour and brown in a hot pan with butter and capers. The firmness of the wing allows it to withstand the “basting” process without falling apart.
