Lemon Sole, Fillet, Fresh, Wild Caught, 1 lb

This is a funny fish….as the name implies, one would think it is in the sole family, but it is not. It is a Pleuronectidae, also known as right-eye flounders, a family of flounders. They are called “right-eye flounders” because most species lie on the sea bottom on their left sides, with both eyes on their right sides. The Paralichthyidae are the opposite, with their eyes on the left side. A few species in Pleuronectidae can also have their eyes on the left side, notably the members of the genus Platichthys.

Our fish comes from North America’s most productive fish grounds, off the Georges Banks fishing area.  It comes in from our vendors throughout New England, primarily from New Bedford, Massachusetts. 

Hi, Chef Adam here – Am I going crazy with the semantics?  – Not really, I am trying to educate everyone about the differences between the great variety we have, and this question always comes up. what is the difference between Lemon Sole and Flounder – Actually Nothing?  The Commercial industry started calling 6-8oz pieces of “Flounder” Lemon Sole to segregate for special buyers.  They would call the 4/6 ounce pieces either just Flounder or Large Mix. At the end of the day, it is all just nice Flounder from the best fishing grounds in the world.
